Phase 2...

Phase 2 - Day 1 - Wednesday
This phase is very hard for us, but its only 2 days so here we go...
Menu
Breakfast
Egg white omelette with turkey sausages and spinach
Snack
His:Bacon Wrapped Chicken Bites
Her:2 turkey sausages with lemon
Lunch
Mushroom turkey Meatloaf (recipe below), a lot of lettuce, spinach and cucumber
Snack
cucumber with lemon
Dinner Egg white Omellete with mushrooms and spinach
Recipe
Mushroom Meatloaf
Instead of oatmeal (or bread crumbs in a classic meatloaf recipe), this version uses mushrooms to absorb juices from the meat and add texture.
Phase 2
Serves 4
Prep time: 10 minutes
Total time: 40 to 45 minutes
1 pound ground beef
2 egg whites
1 cup finely chopped white button mushrooms
1/2 cup finely minced onion
1 1/2 tsp. minced garlic
1 1/2 tsp. tamari or coconut aminos
1 1/2 tsp. fresh thyme leaves
1/2 tsp. dried oregano
1/2 tsp. black pepper
1/4 tsp. sea salt
1/4 tsp. crushed red pepper flakes
Preheat the oven to 350 degrees F. Mix all ingredients in a large bowl until well combined. Lightly press the mixture into an 8-by-4-inch loaf pan. Bake for 30 to 35 minutes (the inside will no longer be pink). Let the meatloaf rest for 5 minutes before slicing. Serve with lots of Phase 2 veggies like steamed broccoli or greens.
